
The Ferment House started with a grinder, two buckets and a stubborn belief that a dosa tastes better when nobody rushes it. Rice and urad dal are soaked in the morning, ground in the afternoon and left to breathe overnight in a warm corner of the kitchen.
By the time the shutters go up in Harrow, the batter is alive — faintly sour, full of air, ready for butter and a hot tawa. That's the whole trick. Everything on our menu, from thatte idli to kanji, comes from something that took its time.
